  • 1 tablespoon of organic coconut water kefir grains
  • ½ litre of fresh coconut water – Avoid flavoured or heavily processed packaged types.
  • 2–3 tablespoons of organic cane sugar
    • You can substitute with jaggery powder, raw sugar, sucanat, or coconut palm sugar.

Step-by-Step Preparation

1. Prepare the base
Pour fresh coconut water into your clean glass jar.
Do not fill it all the way to the top — leave some space for air circulation.

2. Add the sweetener
Stir in 2–3 tablespoons of your chosen sugar until fully dissolved.
This sugar feeds the kefir grains during fermentation.

3. Add the kefir grains
Add one tablespoon of coconut water kefir grains to the jar.
Stir gently with a plastic or wooden spoon to mix.

4. Cover and secure
Place a clean kitchen cloth over the jar and secure it with a rubber band.
This keeps the mixture protected while still allowing airflow.

5. Ferment naturally
Let the jar sit in a warm, well-ventilated area in your kitchen for about 24–48 hours.

  • After around 24 hours, the kefir will taste mild and slightly sweet.
  • After about 48 hours, it becomes more tangy and effervescent.

6. Strain and store
Use your strainer and spoon to separate the kefir grains from the liquid.
