Why Our Kimchi
- Authentic heat, not harsh spice: Made with Korean gochugaru (never generic chilli powder) for a deep, warm, fruity flavour.
- Vegan & clean: No fish sauce, no shrimp, no preservatives. Only vegetables, sticky-rice paste with a little sugar (to start fermentation), and sea salt.
- Salt-Water Soak (2 hours): We soak the vegetables in salt water for 2 hours to sanitize them and keep them crisp before fermentation.
- Thorough washing and clean handling are followed through every step.
Ingredients (Full List)
Napa cabbage, carrot, spring onion, ginger, garlic, onion paste, Korean gochugaru chilli flakes, sticky-rice paste (with a little sugar), sea salt.
Vegan. No fish sauce. No artificial colours or flavours.
Taste & Texture
- Spice: Medium (from gochugaru)
- Sourness: Mild initially; increases naturally as fermentation continues

How We Make It
- Small batches (4–5 kg): Tighter control over salt level, texture, and flavour consistency.
- Prep: Thorough wash + 2-hour salt soak for crisp vegetables; hands-on prep time ~½ day.
- Fermentation: Naturally cold-fermented; ready to eat in ~24 hours, flavour deepens over the next days.

- Authentic flavour profile: True Korean taste from gochugaru and sticky-rice paste.
- Consistent quality: Small-batch process for predictable taste and texture.
- Vegan by design: No fish sauce or shrimp; clean ingredient list.
- Ready next day: Starts tasting good in ~24 hours; gets tangier as days pass.
- Flexible pairing: Works as a side, topper, or mix-in across rice, noodles, and bowls.
